Menu Plan Monday 3/29


I've been trying a few new recipes each week - especially since we've been trying to incorporate one meatless meal each week. Last week it was Butternut Ravioli - and it was a hit! This week it is homemade black bean burgers, and I'm told they will make you want to NEVER buy the boxed kind in the freezer section again! We are also trying to eat more fish. I am not a BIG fish eater, but I am trying! This week we'll be trying a recipe for "Cake Cod" Fish Cakes... they sound yummy.

Menu Plan Monday 3/15


This week we are trying some new dishes! I can't wait to see how they turn out! Each week I cook 5 to 6 dinners for my family. On Saturday my family attends bible study where the families involved take turns sharing a meal. Last week was my turn but for the several weeks I will get to enjoy a Saturday off while enjoying a wonderful dinner with friends! We live in the "boondocks" where eating out doesn't happen very often - good in some ways because my family saves a lot of money NOT eating fast food! We do occasionally enjoy a meal out which I am thinking might happen soon since the last time we did this was 2 and 1/2 weeks ago. Since we do cook a lot and I want to eat more wholesomely and organically we really have to watch our grocery dollars. One way I have cut our grocery bill is by proclaiming one night a week "meatless." At least once a week we have a meatless dinner - this week it is falafel! One of our friends is Israeli and she shared some falafel mix with me so this will be my first try.

Made a BIG shopping trip to Ingles and Earth Fare. But... I'm still using up mostly stuff already in my stash! I am hoping to experiment with my mom's bread machine so I can decide if I'm ready to purchase one of my own. I am really trying to eliminate processed and pre-packaged foods as much as possible and make my own versions of the things I like homemade. Particularly, I am interested in finding recipes for homemade bread and rice mixes.

The pantry challenge is over but we still have plenty of food in our freezer and pantry to keep plugging along without making any purchases besides dairy and fresh produce (and maybe a loaf of bread). I sat down today to do a little planning with what was left and I came up with 4 more weeks! Wow! I had no idea I had that much "reserves!" I'm going to keep plugging along with this and save up a little of my grocery money to make some major meat purchases when the prices are right!
