Like...Uh...The BEST PIE EVER!!! :)

Here is a recipe for like...uh... the BEST PIE EVER!!!
Okay, maybe not EVER... but this pie is SUPER good! And pretty darn easy too! It is a no bake pie too so it would be great for summer. You'll be a hit at the next Bar-B-Que!

White Chocolate Key Lime Pie

Ingredients:
- 7 oz. of good white chocolate
- An oreo/chocolate pie crust (or make your own- I've done both and they taste the same!)
- 1/2 cup of chilled whipping cream
- 1 8 oz. package of cream cheese, room temperature
- 3 Tbsp lime juice (I use the kind in a lime shaped container - like REAL lemon- but lime!)
- 3 Tbsp sugar
- 1 Tbsp of finely grated lime peel (I buy 1 lime/ cut it in half, grate one 1/2 and slice the other 1/2 for garnish: cheaper this way!) ;)
- Lime slices for garnish (optional)

Step 1:
Stir chopped white chocolate in a small metal bowl set over a saucepan of barely simmering water until the chocolate is smooth and melted. Remove the bowl from over the water.

Step 2:
Beat whipping cream until peaks form.

Step 3:
Beat cream cheese, sugar, lime juice, and lime peel in another bowl until smooth. Beat in the melted white chocolate. Fold in the whipped cream in 2 additions.

Step 4:
Spread it into the pie crust. Chill until the filling is slightly firm, at least 2 hours.

Step 5:
Garnish (if you can keep from devouring it) with lime slices.

Delish! Everyone is always shocked at how well the chocolate and lime go together! As you can see from the photo I did manage to get of it...it won't last long! :)

Mmmmm...that sounds so yummy! I think I'm going to make that for Shavu'ot (Pentecost)! I'm sure everyone will love it.
