This week Money Saving Mom posted some info on how she shops and feeds her family frugally ($40/week to be exact!). You can read all about it here.
She also asked many others to respond on how they feed their families on small grocery budgets. I liked the point she made about how not spending a lot didn't mean lack of variety (it's not just macaroni and cheese! :) )
I say AMEN to that! And, that in mind, here is what my "family" had for dinner last night!
And, like I like to say... "It ain't no beans and rice neither!"
We had:
*Chicken Pomodoro (Recipe follows)
*Cream Cheese Mashed Potatoes (my specialty!) :)
*Sweet Baby Carrots
*Sauted Brussels Sprouts
*Sweet Tea
*Strawberry Cobbler
YUM-O!
Chicken Pomodoro:
(Takes 20-30 minutes)
(Serves 4)
4 Boneless Chicken Breasts
Olive Oil
Flour
1 cup Chicken Stock
2-3 TBSP Heavy Cream
1/2 cup of Chopped Tomatoes (I used a partial can of diced tomatoes since tomatoes aren't in season).
1 TBSP Butter
Flour and fry the chicken in olive oil. Remove the chicken from the skillet.
Pour the chicken stock in the hot pan and deglaze the pan. Simmer for about 5 minutes. Add the heavy cream, butter, and tomatoes and simmer just until the sauce is hot. Serve over the chicken.
(This is one of our favorites and it is really super fast and EASY!)
